5 Genius ways to include Avocados in Gujarati Diet

1. Avocado Salad

We can include avocado in a normal salad which is being served with roti and sabji.

INGREDIENTS

  •       Avocado,
  •       Large tomatoes
  •       Red onion
  •       Fresh corn
  •       Fresh green beans
  •       Lemon
  •       Bell pepper
  •       Parsley
  •       Mayonnaise
  •       And olive oil (or normal oil)

Mix all the ingredients after chopping and serve fresh.

2. Avocado Thepla

Avocado thepla is a healthy lunch box dish you can make in a process similar to making Methi theplas.

INGREDIENTS

  •     1 avocado, big [pulp comes to around ½ cup]
  •      1 cup whole wheat flour, some more for dusting
  •      1 teaspoon lemon juice
  •      ¼ cup methi leaves
  •      ½ teaspoon cumin powder
  •      ¼ tsp red chili powder, or to taste
  •      ¼ teaspoon carom seeds, also known as ajwain seeds
  •      salt, to taste
  •      oil, to cook the parathas
  •      water, to knead the dough

PREPARATION

Peel the avocado and take out the pulp [also called avocado meat]. Mash the pulp using a fork or a potato masher.Add cumin powder, salt, red chilli powder, ajwain/carom seeds, lemon juice, and chopped methi or coriander leaves to the avocado pulp. Mix until thoroughly combined.In another bowl measure 1 cup of whole wheat flour [atta]. Add the mashed avocado mixture to the flour. Knead the dough with little water like you knead for regular theplas. Make small balls and flatten it out in round shape. Cook on tava with oil and serve hot.

3. Avocado Chatni

We generally include “chatni” as a dip which we make out of lentils and coriander leaves. Here let’s see how to make avocado chatni.

INGREDIENTS

Avocado-paste-chatni

  •      Avocado
  •      Coriander
  •      Garlic
  •      Lemon juice
  •      Salt and pepper
  •      Olive oil
  •      And yogurt

PREPARATION

Cut the avocado, coriander and garlic in pieces and make a fine paste of it in a grinder. Then mix all the ingredients in the paste . Enjoy it chilled with khakhra, chips or other farsan.

4. Avocado in dessert

All the Gujarati dishes contain a flavor of sweetness. Keeping this in mind, we can prepare a sweet dish made out of Avocado – a superb looking mint green smoothie.

INGREDIENTS

  •        2 avocados
  •        1 large frozen banana
  •        1 handful of ice
  •   1 (14-ounce) can of coconut milk, preferably cold if you like cold smoothies
  •    2  tablespoons hemp seeds
  •   1 tablespoon chia seeds
  • 1 table spoon vanilla bean paste
  • Pinch of sea salt

PROCEDURE

Mix all the ingredients in a blender and blend, blend, blend.

5. Avocado as farsan

INGREDIENTS

  • 1 large ripe avocado
  • 3/4 c. freshly grated Parmesan cheese (or any other cheese)
  • 1 tsp. lemon juice
  • 1/2 tsp. garlic powder
  • Italian seasoning
  • Salt
  • Black pepper

PROCEDURE

Preheat oven to 325° and line two baking sheets with parchment paper. In a medium bowl mash avocado with a fork until smooth. Stir in Parmesan, lemon juice, garlic powder, and Italian seasoning. Season with salt and pepper.

Place heaping teaspoon-size scoops of mixture on a baking sheet, leaving about 3” apart between each scoop. Flatten each scoop to 3″ wide with the back of a spoon or measuring cup. Bake until crisp and golden, about 30 minutes, then let cool completely. Serve at room temperature.
